First of all I want to say to the nasty human that stole my Paella-->which is actually the name of the pan we use to cook the "Paella", that I promise I will hunt you down wherever you are.
Moving on...we are going to need
1 1/2 cups of Spring Onion
3 Cloves of Garlic
1 Tomato
1 Red Bell Pepper(can be replaced or mixed with Green or Yellow Pepper)
3 Squids
2 cups of raw Shrimp
1 Chicken
2 cups of Long Grain Rice
1 cup of flower
1 glass of white wine.
1 1/2 tablespoon of Saffron
4 cups of Chicken Stock
1 1/2 tablespoon of Sweet Paprika
Fresh Parsley
Olive Oil
Butter
Salt & Pepper
And now, the Step by Step!
First of all, chop the spring onions and the garlic, place everything together in a bowl with some olive oil.

Then, we will have to get a grater and grate the tomato into a puree, to which we will need some olive oil on top.

Now chop into brunoise (small dices)the red pepper and set aside. Clean the squids, slice the tails into "calamari" rings and put them in a bowl with the tentacles (if you don´t remember how check the first entry of the blog). Clean the Shrimp removing the intestine making a cut on the top of the tail.

Now cut the chicken, what I did is leave the thighs, and then cut into bite sizes pieces the breasts and the legs. Get some flour on those pieces so you can get a good sear on the chicken. Sear them over some olive oil and butter until is golden brown and remove.

Next, in the same frying pan (remember, some mean human stole or threw away MY Paella) put some more olive oil and start the spring onion, the garlic, and the red pepper.

When they have a nice colour, we add the saffron so we can get that full flavour by roasting it. After that we will add two cups of rice.

With the rice already seared, we will add the sweet paprika and the glass of white wine so we can get all the flavour of the pan into the ingredients.

Next we need to add the tomato pureé, and wait for 5 minutes until it reduces its liquids.

We need to add now, the chicken thighs, and along with it the 4 cups of chicken stock. Remember not to move the rice, contrary to a Rissotto in which we need to, in order to get that starch in the pan.

15 minutes after the stock was placed into the pan, we need to add the Shrimps and the Calamari (both the tentacles and the tubes sliced in the rings)

We cook that for about 5 more minutes, and then we cover the pan with a dishcloth and let it rest for 10 more minutes. Now, remove the dishcloth and sparkle the fresh parsley all over it.
And Voilá!!
